Ingredients

  • 1.5 lbs Brussels sprouts, cleaned and halved
  • 1 tsp yellow mustard seeds
  • 1 tsp Bad to the Bone seasoning
  • ¼ cup Mirin
  • 2 tbsp canola oil
  • 1 tbsp butter, cut into a couple pieces
  • kosher salt and freshly ground black pepper
  • scallions, sliced for garnish

Instructions

  • Halve and trim the ends from the Brussels sprouts. Remove outermost leaves.
  • Heat a large saute pan over medium heat. Add 2 tablespoons canola oil. When the oil is hot, carefully add the Brussels sprouts to the pan. Turn them so they are cut-side down.
  • Pan sear until deep golden, then turn them over in the pan. Add salt, pepper, Bad to the Bone seasoning, and mustard seeds. Continue to cook until slightly softened and well caramelized.
  • Add the Mirin to deglaze, then add the butter. Top with scallions and serve immediately.
