- 2 large pita bread
- ½ cup cheddar, grated
- ½ cup mozzarella, grated
- 3 oz Gorgonzola, crumbled
- 2 tbsp garlic oil (see note)
- 2 scallions, sliced
- Kosher salt and freshly ground black pepper
Preheat oven to 400℉.
Brush the pitas with garlic oil. Sprinkle evenly with cheddar and mozzarella, then the Gorgonzola. Season with salt and pepper.
Bake until cheese is melted and edges are crisp and golden (about 5 minutes).
Slice into 8-12 pieces and garnish with scallions.
Score two pantry ingredients at once by making your own garlic oil. Slice two heads of garlic through the median and lay face-up in a tight-fitting baking dish. Submerge with a neutral oil (canola, soybean), cover with foil, and bake at 300 degrees F until the garlic is caramelized and fragrant.
Both the roasted garlic and the oil can be stored in the fridge for up to 2 weeks.
