White Chocolate Mousse
If there's one ingredient that's synonymous with The Common Man it's white chocolate. This silky smooth, cloud-like mousse was the classic way to finish a meal at The Common Man (sharing optional of course).

- 1 lb white chocolate (melting wafers or chips)
- ⅓ cup triple sec
- ⅓ cup water
- 1 qt heavy cream
- ½ tsp vanilla extract
- 2 tbsp confectioner's sugar
- chocolate-filled wafer cookies, for garnish
- strawberry slices, for garnish
In a double boiler, melt the white chocolate, water and triple sec. Whisk until smooth. Remove from heat and cool slightly.
Using a stand mixer or hand beater, whip the heavy cream with the vanilla and confectioner's sugar until soft peaks form. While mixing, stream in the chocolate mixture. Whip until smooth, light and airy.
Serve chilled in parfait glasses with wafer cookies and sliced strawberries.
