Spicy Garlic Noodle Bowl

Udon noodles, scallions, and sesame seeds tossed in a Korean chili-garlic sauce.

Ingredients
  

  • 8 oz Udon noodles
  • 1 bunch scallions, chopped
  • 2 tbsp black and white sesame seeds, toasted

Quick Pickled Vegetables

  • ½ red onion, thinly sliced
  • 1 zucchini, julienne
  • 1 carrot, julienne
  • ½ cup rice vinegar
  • 2 tbsp sugar
  • 1 cup water
  • kosher salt and freshly ground black pepper

Korean Chile-Garlic Sauce

  • 1 cup sweet chile sauce (Mae Ploy)
  • ½ cup soy sauce
  • ½ cup rice wine vinegar
  • 2 tbsp garlic, finely minced
  • 2 tbsp fresh ginger, finely minced
  • 4 scallions, minced

Instructions
 

  • Make the quick pickles. Place the red onion, carrot and zucchini in container. Heat the sugar with half of the water until dissolved. Add the remaining water, vinegar, and a pinch of salt and pepper. Pour over the vegetables and set aside.
  • Make the Korean chile-garlic sauce by combining all ingredients in a saucepan over medium heat. Simmer for 2-3 minutes until thickened slightly. Remove from heat.
  • Cook the udon noodles according to package instructions. Toss with Korean chile-garlic sauce.
  • Divide noodles into serving bowls. Top with pickled vegetables, scallions, and sesame seeds.

Chef Tips!

Make it your own by adding your favorite toppings. Try kimchi, soft-boiled egg, fried garlic, roasted chicken or pork, or roasted mushrooms.
