Lago Caprese
Simple yet indulgent, our caprese features creamy fresh Italian burrata nestled among vibrant heirloom tomatoes dressed with our signature sweet garlic vinaigrette.
Ingredients
- 2 burrata balls
- 2 heirloom tomatoes, sliced
- 20 grape tomatoes, halved
- 6 crostini
- arugula
- coarse sea salt
- balsamic glaze
Sweet Garlic Vinaigrette
- 2 tbsp fresh chopped garlic
- ½ cup apple cider vinegar
- ⅓ cup granulated sugar
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1½ cup canola oil
Instructions
- To make the vinaigrette, combine all the ingredients except the oil in a blender. Blend until combined. With the machine on low, slowly stream in the oil to emulsify.
- Arrange the burrata ball on top of a nest of arugula in the center of the plate. In a separate bowl, toss the tomatoes in enough vinaigrette to coat them. Using a slotted spoon, arrange them around the burrata, leaving enough space for the crostini. Add the crostini.
- Sprinkle with course sea salt, and drizzle with balsamic glaze.
