Lobster Avocado Toast
Butter-poached Maine lobster and seasoned avocado spread on toasty artisan bread, finished with thinly sliced shallots, lemon, and black sea salt.
Ingredients
- 3 oz cooked lobster meat
- 2 tbsp butter
- 2 ripe avocado
- pinch cumin
- 1 lime, juiced
- 1 garlic clove, grated
- 1 shallot, thinly sliced
- 1 lemon, cut into wedges
- black sea salt, for finishing
- 1 jalapeno, thinly sliced (optional)
- 3 slices Artisan bread of your choice, sliced ¾" thick
Instructions
- Toast the bread until golden.
- Scoop the avocado into a bowl. Season with cumin, grated garlic, lime juice and a pinch of salt. Mash with a fork to combine.
- Place the lobster meat in a small saucepan with the butter. Heat gently over low heat until warmed through.
- Spread the avocado mixture on the toasts. Top with the lobster meat, then the shallots and jalapeno (if using). Finish with a squeeze of fresh lemon and black sea salt. Slice into triangles and serve immediately.
