Spicy Garlic Noodle Bowl
Udon noodles, scallions, and sesame seeds tossed in a Korean chili-garlic sauce.
Ingredients
- 8 oz Udon noodles
- 1 bunch scallions, chopped
- 2 tbsp black and white sesame seeds, toasted
Quick Pickled Vegetables
- ½ red onion, thinly sliced
- 1 zucchini, julienne
- 1 carrot, julienne
- ½ cup rice vinegar
- 2 tbsp sugar
- 1 cup water
- kosher salt and freshly ground black pepper
Korean Chile-Garlic Sauce
- 1 cup sweet chile sauce (Mae Ploy)
- ½ cup soy sauce
- ½ cup rice wine vinegar
- 2 tbsp garlic, finely minced
- 2 tbsp fresh ginger, finely minced
- 4 scallions, minced
Instructions
- Make the quick pickles. Place the red onion, carrot and zucchini in container. Heat the sugar with half of the water until dissolved. Add the remaining water, vinegar, and a pinch of salt and pepper. Pour over the vegetables and set aside.
- Make the Korean chile-garlic sauce by combining all ingredients in a saucepan over medium heat. Simmer for 2-3 minutes until thickened slightly. Remove from heat.
- Cook the udon noodles according to package instructions. Toss with Korean chile-garlic sauce.
- Divide noodles into serving bowls. Top with pickled vegetables, scallions, and sesame seeds.

Make it your own by adding your favorite toppings. Try kimchi, soft-boiled egg, fried garlic, roasted chicken or pork, or roasted mushrooms.
