Camp Crackers

Ingredients
  

  • 2 large pita bread
  • ½ cup cheddar, grated
  • ½ cup mozzarella, grated
  • 3 oz Gorgonzola, crumbled
  • 2 tbsp garlic oil (see note)
  • 2 scallions, sliced
  • Kosher salt and freshly ground black pepper

Instructions
 

  • Preheat oven to 400℉.
  • Brush the pitas with garlic oil. Sprinkle evenly with cheddar and mozzarella, then the Gorgonzola. Season with salt and pepper.
  • Bake until cheese is melted and edges are crisp and golden (about 5 minutes).
  • Slice into 8-12 pieces and garnish with scallions.

Chef Tips!

Score two pantry ingredients at once by making your own garlic oil. Slice two heads of garlic through the median and lay face-up in a tight-fitting baking dish. Submerge with a neutral oil (canola, soybean), cover with foil, and bake at 300 degrees F until the garlic is caramelized and fragrant.
Both the roasted garlic and the oil can be stored in the fridge for up to 2 weeks.
